Dutch apple pie is authentic, easy to bake and delicious with a cream inside the pie. Of course we Dutch people claim that the apple pie from our grandmother is the best recipe. However, I will give it a try here.
The apple pie consists of two parts. The pie and the optional but great cream you could add. For the apple pie you need the following:
- 6 apples (I made it with granny smith)
- 300 gr of flower
- 150 gr of sugar
- 175 gr of cold unsalted butter
- 1 egg
- a bit of vanilla flavoring (optional)
- 2 teaspoons of cinnamon
For the covering you need:
- 50 gr of butter
- 50 gr of flower
- 50 gr of sugar
- 75 gr of flaked almonds (optional)
For the cream:
- 4x egg yellow
- 500 ml of (full) milk
- 60 gr of sugar
- 25 gr of flower
- a bit of vanilla flavouring (optional)
Let’s start with making the cream:
Mix the egg yellow and vanilla flavouring till it is almost white, add the flower and the sugar and mix it till a thick paste. In the mean time you can boil the milk as well. When you are done take the boiled milk from the fire and mix it with the paste, put it back on the fire and cook for 5 / 10 minutes, make sure you stir in the mean time the whole thing. You will get a thick paste in the end. Put it off the fire and stir sometimes when it will get colder. When it is on room temperature put it in the fridge to get it thicker.
For making the pie:
Mix the flower and the sugar, add the butter (it is easier to add first half of the butter cut in small pieces mix this and then add the other half cut in small pieces) and add the egg (mix the egg before). Knead the mixture till you have a strong dough, put the dough for 15 minutes in the fridge (if the dough is too wet add some extra flour, if it is too dry and is falling apart add some butter).
Cut the apple in small pieces (remove the skin), add the vanilla flavoring and cinnamon, mix it together.
Use a pie shape, put some butter and flour on it. Spread the dough equally in a pie shape. Fill the dough with the cream and the apple (spread everything equally).
For the covering:
Mix the butter, flower and sugar till you have crumbles. If it is crumbly you can add the almonds. Put this on top of the apples.
Put everything in the oven (175 degrees Celsius) for 60 minutes. In case if the top gets too dark during the baking cover it with some aluminium foil.
